Old School Eating

Of late we’ve been having Meatless Mondays and Fishy Fridays. I thought Whit would buck me on this, but he’s actually been quite gung-ho. That got me to thinking about how we ate growing up. Meat was a rarity at our table. A typical weekday meal at our house was dry beans, coleslaw and cornbread. Meat was reserved for Sunday meals. In the summer time we ate a lot of greens, peas and assorted fresh fruit and vegetables. “Fried” white corn was a special favorite. I can still remember the sweetness of eating corn that was just hours out of the field.

With that in mind, tonight I fixed one of my favorites, collards and field peas with corn bread. I didn’t eat the cornbread, but I probably ate a pound of collards by myself!
